As you have to provide Deeds etc... maybe just use the Notary who was involved when you have purchased the property after all he has all the documents.
When we purchased our Leaseback we engaged Luce BROUSSE-CHAMICHIAN, Notaire, of BROUSSE-CHAMICHIAN AND ASSOCIATES2 Avenue Du Stade - RIVESALTES, 66600 - France.
We selected our own Notaire rather than using the one used by the seller.
The main benefit for us was she spoke fluent english and explained everything. In the lease we give 4 weeks per year for letting only.

I would recommend using the
